It is prized for its ability to retain its crunchy texture even after cooking, & is popular in sushi, stir-fries, salads, as a side dish, & for flavoring meat & fish. It’s full of vitamins & minerals. Baby leaves can be harvested as early as 2 weeks, & can continue to be harvested until the plant flowers. Saltwort is native to salt marshes so it does great in coastal conditions, but grows just fine without any salt at all so can be grown in normal garden conditions. It can even tolerates poor soil, or be grown in containers.
