OTHER: Malabar Spinach is not a true spinach. It is an heirloom open pollinated leafy green that is a great alternative for summer. Malabar Spinach loves warm weather (up to 95F!), humidity, & is drought tolerant. It grows well anywhere, from poor soil to containers, offering a continuous harvest all summer long. It is perennial in zones 9 & up, but this fast-growing vine can be grown as an annual elsewhere, with leaves ready to harvest from just 60 days onward.

Malabar Spinach leaves have a mild, slightly peppery taste with hints of citrus, & are rich in Vitamins A & C, iron, & calcium. They can be used in all of the same ways that regular spinach can. The leaves are crisp when they're raw, but become tender when they are cooked, Young tender leaves can be enjoyed in salads, on sandwiches, or blended in to smoothies. Older leaves can be cooked for a stand-alone side dish or added to soups & stews. Malabar Spinach is popularly used in stir-fries & curries because it has a high mucilage content, making it a wonderful natural thickening & binging agent.

Red & Green Malabar Spinach have similar growth habits, heat tolerance, & flavor, & the two can be used interchangeably in recipes. Green Malabar is faster growing, offering a higher yield of larger leaves (4-6" for Green Supreme & 4 - 8" for Big Round Leaf), while the lovely Red Malabar Spinach is more ornamental, & contains higher levels of antioxidants.
