"Capers" are the edible flower buds of the caper bush that have been pickled in salt. The buds are picked when they are dark green & the size of a corn kernel for pickling during which they develop the wonderful flavor they are known for. Capers are an ingredient in tartar sauce, pasta dishes such as chicken piccata & spaghetti alla puttanesca, salmon dishes such as lox & cream cheese, used in salads, & more. They are popular in Mediterranean & Italian cuisine, & becoming more so worldwide.
If you choose not to harvest your flower buds for capers, you will be regarded with big beautiful flowers have a sweet fragrance. The fruit that replaces the flowers are called caper berries, & they also pickled & eaten.
